This looks ahhhh-mazing. I’ve been vegan for 5 years and more recently, based on a cluster of things that just fell in together all at once, have been considering transitioning to vegetarian to make my life a little easier for now. (Vegan ready to eat food isn’t cheap when you don’t have time to batch cook from scratch every week or the proper mindset to meal plan.) It was great for me for 5 years and I’ll go back but for now, it’s almost as if my restrictions have been lifted and recipes like this are just <3 This is the first I've openly said it aside from my husband, because I am afraid of how people will react when they find out I'm not vegan anymore (stereotypes and all, though it was never about that for me). See? Here I go trying to explain myself and I don't need to. LOL Love your blog, Genevieve.

OMG! I tried this with a few of my girlfriends and it was amazing. They ordered me to make it and bring it the next time we get together. Just have to perfect that gluten free version before then. LOL. Thank you for sharing.
