My kids, apparently. Staying hydrated is an absolutely must in this blazing Texas heat, so you know what they say: when life gives you 100 degree temps, you make lemonade! I started making my kiddos this healthy 3-ingredient lemonade over the summer and it’s quickly become a family favorite. It’s a fast and easy recipe even my five-year-old can make, and swapping the sugar for raw honey helps to keep the drink from being *too* sweet. Simply mix the ingredients together, pour over ice and enjoy. Give it a try and let me know what you think! Healthy 3-Ingredient Lemonade 1 cup lemon juice (about 5 fresh lemons) 1/3 cup honey 4 cups water (still or sparkling)   What’s your go-to warm weather drink? SHOP THE POST

What We’ve Been Cooking in Quarantine https://nowandgen.com/2020/04/28/what-weve-been-cooking-in-quarantine/ https://nowandgen.com/2020/04/28/what-weve-been-cooking-in-quarantine/#comments Tue, 28 Apr 2020 14:00:30 +0000 https://nowandgen.com/?p=5288 We’ve always cooked a lot in the Padalecki household, but man—I’ve never cooked so much (or done so many dishes!) in my entire life as I have these last two months. And I know I’m not alone. With restaurants closed and takeout much harder to get these days, I’m pretty sure everyone is spending a lot more time in the kitchen cooking in quarantine. To battle the food boredom and use up produce before it goes bad, we’ve been trying to get creative and find delicious recipes that don’t require too many ingredients or too much effort. Here are eight of my go-to quarantine cooking recipes, from salmon and egg standards to vegan and junk food–inspired options. See any that interest you? Give them a try, and then let me know how they turned out! And I’d love it if you would share your favorite recipes in the comments below. I’m always looking for new things to cook that will please the whole family. Quinoa beet salad with feta from Amy Chaplin I love anything with beets, particularly this recipe. You can see Amy’s passion for food and food prep in her cookbook, Whole Food Cooking Every Day. Her recipes reflect […]

My Aunt’s Famous Biscotti Recipe https://nowandgen.com/2019/12/21/my-aunts-famous-biscotti-recipe/ https://nowandgen.com/2019/12/21/my-aunts-famous-biscotti-recipe/#comments Sat, 21 Dec 2019 08:31:06 +0000 https://nowandgen.com/?p=4943 Growing up, my family was traditional in the sense that every Christmas we picked out our tree, scattered ornaments around the floor, and discussed (and fought over) which ornament went where—and who got to hang the angel. We drove through neighborhoods strung with lights and with Santas flying over chimneys and voted on which house we loved the most that year. We did the obligatory smile-for-the-camera Christmas photos, but that was pretty much the extent of our “traditions.” I always attempted to bake, but being the oldest of four unique siblings, I felt like I could never satisfy everyone’s cravings. The one exciting treat everyone agreed upon was waiting in a shiny tin that arrived by post promptly before every Christmas. The contents inside were the most delectable homemade biscotti from my Aunt Cathy. These biscotti had the best crunch (not too firm and not too chewy) and soaked up hot chocolate, coffee, or tea just right. I looked forward to my Aunt Cathy’s shipment every year. And even though we lived close to each other for the 13 years that I lived in the Bay Area, she never failed to mail them. Maybe it’s her Georgia roots and Southern traditions, […]

Gluten Free Christmas Cookies https://nowandgen.com/2019/12/11/gluten-free-christmas-cookies/ https://nowandgen.com/2019/12/11/gluten-free-christmas-cookies/#comments Wed, 11 Dec 2019 17:16:26 +0000 https://nowandgen.com/?p=4871 There’s nothing the kids and I love more than turning on some holiday tunes and getting silly while making and decorating Christmas cookies. But that’s gotten a bit trickier to do since I’ve gone gluten free. So, I asked my friend and cookie connoisseur Lindsey Johnson (check out her Instagram @ladyinthewildwest) for ideas. She was sweet enough to share this holiday cookie recipe that is both gorgeous and gluten free! The “painted” ornaments are made with a delicious blend of chocolate and peppermint. And while these gluten free Christmas cookies look amazingly artistic, I promise you that they are easier to make than you would think!  Keep reading for Lindsay’s fantastic ornament cookies recipe. And tell me in the comments: What’s your favorite holiday cookie to make (eat!)? Ornament Cookies By Lindsey Johnson One of our favorite cookies for the holiday season, these chocolate peppermint sugar cookies are simple to make, won’t spread in the oven, and taste just like brownies. They’re delicious on their own, but for a festive family craft project, we’ve dipped them in colorful vanilla candy coating and added gold luster dust to make them look like beautiful ornaments. Such a cute holiday gift! That is, if […]

A Conversation About Food, Family & Sustainability with Candace Nelson https://nowandgen.com/2019/12/10/a-conversation-about-food-family-sustainability-with-candace-nelson/ https://nowandgen.com/2019/12/10/a-conversation-about-food-family-sustainability-with-candace-nelson/#comments Wed, 11 Dec 2019 00:18:45 +0000 https://nowandgen.com/?p=4913 Conversations with friends are one of those simple, soul-nourishing activities I could do for hours and my recent conversation with Candace Nelson was further proof. You might know Candace as the founder of the tremendously successful Sprinkles Cupcakes (now in over 24 locations!) or her TV appearances on shows like Cupcake Wars and Sugar Rush. She’s also helped me make her ultimate vanilla cupcakes and delicious gluten-free granola bars during my marathon training. I sat down with Candace in Los Angeles a couple of weeks ago to talk food, family and sustainability on her podcast “Live to Eat.” She’s so much more than just the queen of cupcakes. She’s a dear friend and I loved our time chatting together. Let me know what you think! You can also listen to my episode on her podcast, Live to Eat, on Apple, Podbean or wherever you listen to podcasts!

Fall Recipe: Pickled Apples and Pears https://nowandgen.com/2019/11/19/fall-recipe-pickled-apples-and-pears/ https://nowandgen.com/2019/11/19/fall-recipe-pickled-apples-and-pears/#comments Tue, 19 Nov 2019 16:33:13 +0000 https://nowandgen.com/?p=4585 I've been trying to limit our food waste. So, when we recently had an abundance of apples and pears that I didn’t know what to do with, I reached out to my chef friend Brock Lane for ideas. His suggestion: PICKLE them. Say what? I'd never thought to pickle fruit, but I did it and I have to say, the results were delicious and gorgeous.

The kids couldn't get enough and it was just what we needed to reconnect after a busy week.

Berry Compote Breakfast Bowl https://nowandgen.com/2019/05/30/healthy-breakfast-bowl-recipe/ https://nowandgen.com/2019/05/30/healthy-breakfast-bowl-recipe/#comments Thu, 30 May 2019 20:27:08 +0000 https://nowandgen.com/?p=3940 I’m always looking for simple, healthy meals I can prep on Sundays that will help minimize the chaos of the coming week. A new favorite is this fruit-filled breakfast bowl from our talented friend and chef, Brock Lane. We first met Brock around [American] Thanksgiving in Vancouver. Jared and I were gearing up to run the Seattle marathon (half-marathon for me) and realized our holiday diet of green bean casserole and pumpkin pie wasn’t going to cut it. A friend connected us to chef Brock who is known for working magic with fresh, simple ingredients. His meals not only fueled our training but quickly became family favorites. This healthy breakfast bowl is made with a rich and creamy homemade almond milk. Don’t worry—it’s way easier to make than you think! It also tastes so much better than anything you’ll find at the grocery store. I love making it on the weekend to have for cereals and granola all week. The berry compote is so good it makes my kids lick their bowls clean. (P.S. it’s also a great ice cream topper!) Check out our how-to video, then try it yourself with the recipe and chef’s tips below!   Berry Compote Breakfast Bowl […]
